Tired Muscles

Oh boy, am I sore! Swim practices are really getting to me! I have now realized how out of shape I am in the water. As much as my body wants to skip out halfway through practice, I force my mind to remind myself that I can do this; I am STRONG enough! This applies to the challenge of maintaining a healthy lifestyle, as well as many other things in life.

Before heading to practice I fueled up with an apple.

I had to be super speedy getting ready this morning, and I needed quick protein before class. I mixed Blue Diamond Almond Milk with a half scoop of chocolate protein powder.



It gave me a fast form of recovery fuel, but I was still very hungry for real food. Unfortunately, I only had enough time to race to class.

After class, my only thought went to food! I went back to my dorm room and prepared egg whites topped with salsa, and some frozen berries.




I didn’t take a picture of lunch, but I had a turkey sandwich with lettuce, tomato, and mustard, and an apple on the side. After lunch I worked on some homework, and read more of Divergent(I cannot put the book down!). I then went down to the “home” gym we have in my dorm, and did 15 minutes on the elliptical, and 15 minutes on the treadmill. I covered about two miles with both of the machines combined.



I also received a special treat from my Secret Sister. My friends and I started a Secret Sister  thing together, and we get a new one each semester. Mine left me a note that read, “Have yourself a merry little J-term.”, and left a tube of mini Reese’s. Whoever it is, thank you!

After my run, I was craving carbs and salt so I had some Multigrain Club crackers.



About an two hours and several chapters of my book later, we all met up for dinner in the caf. Still no picture, but I made a simple salad, and I had a banana on the side.

After dinner we met up with a group from church, and played board games while drinking hot chocolate. It was a fun way to end the day.

I just got back, and as I write up this post I am trying one of my Sun Cups.



They look identical to Reese’s, but with a distinct sunflower seed taste. I enjoyed them.



I think its time to read more of my book! Seriously, read Divergent before the movie comes out!


J-term Begins

With the new year comes a new semester of school. At my college, all freshman are required to take J-term. J-term is a 3 week mini semester where we can take one class. I chose to take Christian Worldview, and I’m excited to see what I learn from this course!
Along with the start of J-term comes with more swim practices! My day began at 6:00 this morning when I jumped out of bed to get ready for the first swim practice of the year! After I wrestled with my swim suit, I quickly ate a Nutrigrain waffle before heading to the pool!

I swam for an hour this morning following this set for 2100 yards:
-10×100 Free/Stroke/IM
-2×25 underwater
-300 Pull
-2×25 underwater
-10×50 Kick
-4×25 underwater
-100 cool down

After completing the set, I quickly got ready in the locker room. My class is at 9 AM, and so I was rushing in fear of being late. On my way to class I ate an individual package of trail mix.

After class I was still hungry, so I went back to my room and made some egg whites.

My class is only an hour each day, and aside from that and swim practice, I have a ton of free-time. My goal is to look for a job during this time. I need a job, so I might as well start the search when I don’t have much else to do!

After a few hours of trying to keep myself busy, I met my friends in the caf for lunch. No picture, but I was in the mood for cereal. I made myself a bowl of Cheerios with skim milk and a banana.
After a quick Wal-Mart run, I decided to do 30 minutes on the elliptical. And then I refueled with chocolate.

I love these Unreal candies! All in moderation right?

I got my reading done for class tomorrow, and then a few friends and I walked over to Braums for dinner. I wasn’t interested in any of the typical greasy burgers or chicken on the menu. I decided on the Fruit & Yogurt Swirl.

It contains plain yogurt, strawberries, banana, and chopped nuts. It was a good simple dinner.
Now we are sitting down to watch Dirty Dancing. I hope to get in bed by a decent time since tomorrow begins with another early swim practice. Talk to y’all tomorrow.

New York Baking Company Review

The New York Baking Company recently reached out to me to review one of their products. They asked if I would be willing to test their Silicone Baking Cups by Rizzi, and of course I said yes! These awesome baking cups are made of silicone, non-stick, and BPA free! They retail for a price of $8.95, and can be found on Amazon.



I decided to make Krusteaz Cinnamon Swirl Mix. I quickly mixed up the batter, and poured them into the baking cups. After they were done baking, I let them cool before testing the non-stick claim.



I was really excited to see if the muffins would come out easily. I have tried similar baking cups that did not uphold to their claims.




However, these did not stick at all! They came out perfectly! I was so impressed with how easily they slipped out of the baking cups! I highly recommend these baking cups because they make baking easier, and are reusable! Thank you Rizzi for letting me review this awesome product!

A Movie Bet

I’m not a fan of snow. Call me crazy, but I don’t like this weather. As I said in my previous post, today is the day we were supposed to head back to school. However, we are snowed in, but should be able to get on the road tomorrow.

Anyways, due to our snow day, we decided to have some fun with it and sang a little karaoke, played Wii Sports, watched the remainder of the X-Men series, etc.
We have been watching a lot of movies this week for a reason! A friend and I made a bet on which one of us could watch more movies in the year 2014. I have an on going list….

We will see who wins, but my bet is on me!
For dinner we had hamburgers. However, what do you do when you are out of burger buns? Put all the burger fixings in a tortilla!

I topped my “burger” with tomato, lettuce, cheese, mustard, and ketchup. We also had some sweet potato waffle fries on the side. Yummy dinner!
We ended the day with more virgin piña coladas.

Chocolate Gravy? Yes, Please!

How is this Saturday treating everyone? Mine began when I slept way later than usual, and had a delicious breakfast! Today my friend introduced me to chocolate gravy! What? Chocolate gravy? Yes! It’s like dessert for breakfast!


We ate the chocolate gravy on biscuits with scrambled eggs and bacon! So good! Who says every meal has to be healthy?
Since this meal was technically lunch( we ate at noon), we sat down to watch Taken! This was my first time watching it, and it was soooo intense! I was on the edge of my seat!
Several hours later, we had homemade tacos!

Topped with taco meat, lettuce, diced tomato, sour cream, and salsa. There was also a lot of chips and 7-layer dip!

I think it’s time for me to get back to my healthy eating and daily workouts. These past three weeks have been great, but I’m definitely ready to get back to the norm. We head back to school tomorrow! As weird as it may be, I’m kind of excited! Time to pack up, ad probably watch another movie before turning in! Talk to y’all when I get back to school!

Saving Mr. Banks

It’s Fridaaaayyy!! What’s up people?
My morning started out with a healthy breakfast of eggs, fruit, and a glass of cold milk.

We got ready for the day, and headed out to see Saving Mr. Banks. Everyone kept telling me that it was a fantastic must-see, and it did not disappoint! I’m a huge Disney fan, and this was such a great movie!
Later on we all headed to Olive Garden for dinner. I filled up in salad and a breadstick.

And ordered the Venetian Apricot Chicken for my entree.

I’m so stuffed right now, and we decided to sit down and watch 27 Dresses before calling it a day! Can’t wait to see what tomorrow holds!

I drank a Zebra

How is the New Year going so far? I’m still enjoying the beginning of 2014 with my friends before heading back to school.
We woke up late this morning, and after getting ready we sat down for brunch of homemade French toast.

I topped mine with banana slices and maple syrup. We also rounded out breakfast with some hot chocolate.

Later on we headed to my friends favorite coffee shop outside of town. She highly recommended that I try a Frozen Zebra.

It’s like a frappecino with dark and white chocolate swirls. It was really good, but overly sweet.
We spent a few hours at the coffee shop reading. I know, we are kinda boring.

I started reading Divergent. I’m not that into it yet, but I’m promised it gets better. I guess we will see!

We returned to my friends house, and decided to watch New Years Eve since we never got around to it on the actual day. It was a cute movie, and we indulged in some Cowboy Bark from Trader Joe’s.

Later on, we went to a football party to watch the OU and Alabama game. I’m not big on watching football, but our BBQ dinner was great!

The name of the BBQ joint slips my mind, but I had a BBQ salad with chopped brisket. It was really good, and filled me up.
Now I’m exhausted, and ready to get some sleep. I’ll talk to y’all tomorrow! Good night!

Welcome to 2014

Welcome to 2014 everyone!

I rang in the New Year with some if my best friends!

We watched the ball drop and celebrated with virgin piña coladas and sparkling grape juice!

I’m so excited to see what the new year has in store! 2013 was crazy and great!
I ran my first half-marathon….

Traveled to Asia……

Started College….

And rounded out the year with a trip to Disney World….


With as great as this year has been, I have high hopes of an even better 2014! Happy New Year!

I decided a couple says into the trip to just enjoy the time with my family, and did not make blogging a priority. So…. Here are some pictures of the trip!

























Disney Vacation 2013: Day 1

Our first day at Disney World has come to an end. We spent the majority of the day at Magic Kingdom!

The first ride we ran to was Pirates of the Caribbean.


We also went on a Pirate Treasure Hint around Adventureland!

This was something that we had never done before, and it was a lot of fun! After all this and a couple other rides, I tried a treat that I had never had before.

A Dole Whip Swirl! This is a very popular treat in Disney World that I was really excited to try! This may or may not have been my breakfast…..
We continued to ride more rides. We were able to fit a lot in today, and the lines were not as bad as I had expected!
When afternoon rolled around, everyone was ready for lunch. We headed over to Columbia Harbor House.

I had the grilled salmon with couscous and broccoli, and a strawberry yogurt for my dessert. The salmon was great! Especially for a very busy fast food place. The lunch was very filling, and gave me the energy I needed to enjoy more fun at the park. On a side note, going to Disney when they are offering the free dining plan is one of the best values you can get!

Anyway, we continued the day roaming around the park, and riding all the rides we had been looking forward to!

We went back to our hotel to freshen up before heading to Epcot for our late dinner reservation at Coral Reef.

This is one of my favorite Disney restaurants because you feel as if you are really under the sea!
By the time we were seated I was ready for food!

I had the grilled mahi mahi with flying bird shrimp, jasmine rice, heart of palm, cilantro, and coconut-lime sauce. This was amazing! The fish and shrimp were so tender, and the sauce was delish!
But the best part of any Disney meal is dessert!

I indulged in the Chocolate Wave, which is a chocolate molten cake. It is the ultimate chocolate overload. I couldn’t even finish half!

That puts an end to our first day if adventures in Disney World. Tomorrow we head to Hollywood Studios! See you tomorrow friends!
