I have a new delicious recipe for you all today! And it kinda screams fall, but it works in the summer heat too.
Chocolate Chip Pumpkin Oatmeal Bites:
Adapted from Greenlite Bites
– 15 oz. can pure pumpkin
– 1/2 cup unsweetened almond milk
– 2 eggs
– 1 tbs. baking powder
– 3 cups Old-fashioned oats
– 1/4 tsp. each of nutmeg, cinnamon, and ginger
-1/3 cup brown sugar
– 1/2 cup mini chocolate chips
Preheat oven to 375 degrees. Mis all ingredients together. I used a mini muffin pan to make my bites. Prepare muffin cups and fill each cup to the top. Bake between 20-30 minutes. Mine only took about 20 minutes since they were small bites. Allow to cool completly before removing from the muffin tin. Store in an air-tight conatainer. I froze half of my batch. Enjoy!
I’ve been enjoying these little bites before my moring runs and bike rides for fuel. They are great snacks, and will be even better when fall rolls around!
