Early Celebration

The other night we decided to celebrate a few occasions a little early before my Uncle headed back to Hong Kong for another year. He is a teacher there, and is only able to come home for either summer or Christmas each year. Since my birthday and his birthday are in the next month we celebrated both tonight at Babe’s Chicken. Keep in mind Babe’s is not a place for the health conscience. It is true Southern cookin’ with lots of butter, gravy, and fried meat. Everything is served family style, and is all-you-can-eat.

I started of with two small helpings of salad in their secret dressing, and a biscuit.

Then it was time for the star of the meal! My plate was filled with smoked chicken, mashed potatoes w/ cream gravy, green beans, creamed corn, and okra and tomatoes.

Everything is greasy and buttery, but what do you expect from a fun place like this? I always do my best to control my portions at Babe’s so I don’t feel totally weighed down when we walk out, but we all go a little overboard. All in moderation, right?

Now the true excitement of the evening was when my Papa decided he would tell our waitress what we were celebrating. Not five minutes later, half the staff came out singing “Happy Birthday”, along with these stylin’ chicken hats. I decided to embrace the moment, and not be embarresed by the crowds of diners starring.

All in all, it was a fun evening and we were sad to see my uncle head back to his home half-way around the world.

 

This morning I woke up for a painful 3 mile run. My shins have really been bothering me, so I think I will be taking it extra easy this weekend. I kept a 12 minute pace this morning, while taking walking breaks as needed. I hope to be back to my old running self soon!

I came home from my run wanting a cold breakfast. Even at 7 in the morning, it’s already HOT here in Texas! I had a bowl of plain Chobani, strawberries, wheat puffs, and a sprinkling of granola.  There was also a little PB2 in the bottom of the bowl for extra flavor!

Now, ever since returning from Taiwan I have been fascinated by the Chinese language. I’m in the process of teaching myself basic converstaion for when I return. I already have English as my first language, and Spanish as my second… Why not go for a third? I’ll catch ya later! Have a SUPER Friday!

Chocolate Chip Pumpkin Oatmeal Bites

I have a new delicious recipe for you all today! And it kinda screams fall, but it works in the summer heat too.

Chocolate Chip Pumpkin Oatmeal Bites:

Adapted from Greenlite Bites

– 15 oz. can pure pumpkin

– 1/2 cup unsweetened almond milk

– 2 eggs

– 1 tbs. baking powder

– 3 cups Old-fashioned oats

– 1/4 tsp. each of nutmeg, cinnamon, and ginger

-1/3 cup brown sugar

– 1/2 cup mini chocolate chips

Preheat oven to 375 degrees.  Mis all ingredients together. I used a mini muffin pan to make my bites. Prepare muffin cups and fill each cup to the top. Bake between 20-30 minutes. Mine only took about 20 minutes since they were small bites. Allow to cool completly before removing from the muffin tin. Store in an air-tight conatainer. I froze half of my batch. Enjoy!

I’ve been enjoying these little bites before my moring runs and bike rides for fuel. They are great snacks, and will be even better when fall rolls around!

Good Entertainment

Hello there! How is everyone’s weekend? Mine has been go, go, go….but it has all been fun.

Friday my sister and I went and saw R.I.P.D. It was alright, not as funny as I was hoping. But Ryan Reynolds, ya’ll. Nuff’ Said!

Afterwards, we had an early dinner of tureky sloppy joes and sweet potato fries.

I had mine on a whole wheat sandwich thin with a laughing cow cheese wedge, carrot chips, mustard, and ketchup. And what can beat sweet potato fries???

After dinner I had to rush off to my grandparent’s house for some good, old country entertainment. My grandma had recieved some tickets to see the popular country band, Asleep at the Wheel. We had fun just spending time together listening to some of her favorite music.

I ended up spendig the night since we got home late, and they live a good 45 minutes away from me. The next morning we went walking and set down to a gourmet breakfast of cereal and toast.

I mixed Peanut Butter Cheerios and Kashi GoLean Crunch with some blueberries and a banana. I also had 1/2 a slice of whole grain toast.

Now I’m spending a lazy Sunday afternoon watching some old movies with my family. Have a great Sunday!

Fun Finds at Trader Joes

It’s Fridaayy!! I’m getting ready for a relaxing weekend with my family. What are everyone’s plans for the weekend?

Yesterday morning began with an early morning bike ride.

I biked 5 miles while watching a beautiful sunrise.

Biking is becoming one of my favorite past times, I found them very relaxing.

Breakfast yesterday was a usual favorite..oatmeal with banana and peanut butter which eluded any pictures.

I spent the morning doing some work around the house, and having many conversations with my friends from Taiwan until it was about 2 in the morning there. When it was time for lunch I wanted something quick an easy.

Flatout sliders with black beans, mini bell peppers, carrots, and some peanut butter for the carrots. Quick, simple, delicious.

Now onto the main point of this post! I love Trader Joe’s. i only have one near my house, and two more are soon to open. It’s always fun to see what kind of new things I can find on my rare trips to the store.

Here is what I found from my trip on Wednesday…

1. High Fiber Fruit & Nut Medley Cereal- Taste like bran flakes, not very sweet.

2. Hansen’s Diet Root Beer- This is some of the best diet root beer I have yet to find!

3. Chocolate covered Almonds and Espresso Beans- I’m pretty sure Trader Joes has chocolate covered anything!

Introducing Taiwan

Happy Thursday! I hope evryone had a great Wednesday, because I sure did! I spent the day introducing Taiwanese food to my mom and sister. Our girl’s day out started at Pho Twins, a local Vietnamese restaurant that also has some menu items originating from Taiwan.

My original plan was to get beef noddles, but changed my mind when I saw they had a seafood version. It was delicious. My mom fell in love with it, but my sister was not a fan.

We also ordered some spring rolls with shrimp and pork. Love these dipped in the peanut sauce.

Our next stop was the Hong Kong Market, which has a wide array of Asian cuisine. I scoured the store for different items I tried during my stay in Taiwan. I was able to find some of my favorite goodies, along with some new ones.

Yes, these would be snails. And yes, I did try these at the Night Market. Not bad, but not a favorite.

Obsessed with mango these days. Like an all day, everyday odsession with this yummy fruit!

Then it was on to the mall. Unfortunatley, I didn’t get many pictures due to my phone dying.

And more proof of my mango obsession in the form of a Red Mango smoothie. I had mango smoothies in Taiwan, and they were way better, less expensive, and i miss them terribly. Is anyone understanding how much I’m loving mangoes, yet?

After a fun day of shopping we returned home. Mom made a yummy dinner of cornflake chicken, roated red potatoes, and broccoli. It hot the spot!

I loved having a day to just spend with my mom and sister. Yesterday marked exactly one month until I move into my dorm, and I cherish these days I have left spending with my family. Hope you all enjoy the day with your own families. I’ll see everyone later! Time to get some work done today!

Clear as Can Be

Good Morning! How is evryone’s week treating them so far? Mine is pretty fantastic!  As I mentioned a few weeks ago in a post, my Mimi was having to go in for some extra tests due to the fact that they thought the cancer had returned in her lungs. Last week while I was in Taiwan, she went in for a PET scan. However, yesterday she got the test results back, abd they were as CLEAR as can be! Thank You Jesus! We couldn’t be happier right now with the great news!

 

So, onto today! This morning I was up bright and early for an easy 4 mile run. I ran at a slow 10 minute pace, also using run/walk intervals! It feels so good to be running after taking the past two weeks off while I was out of the country!

After my run, I came inside and made a simple, but delicious breakfast. A toasted whole grain bagel with a Laughing Cow Swiss cheese wedge and sliced strawberries. And a side of blueberries!

Now, I’m off to spend the day with my mom and sister. I’m hoping to introduce them to some Taiwanese food for lunch! see you in a bit!
