April Foodie PenPals Reveal 2013

Good morning folks! How’s everyone doing this morning? I’m doing pretty good! I’m so excited to reveal this month’ss Foodie PenPals to you all!

For those of you who have never heard of the Foodie PenPal program, here is a little information set up by Lindsay at The Lean Green Bean!

  • On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
  • You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal! 
  • The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
  • You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
  • Foodie Penpals is open to blog readers as well as bloggers. 
  • Foodie Penplas is open to US, Canadian & European residents.  Please note, Canadian Residents will be paired with other Canadians only. Same with Europeans. 

Now, for the reveal! I received my box from a reader, Courtney! She was really great, and sent me some awesome stuff!

Trader Joe’s dried fruit bars in Strawberry and Apricot! These are a great pick me up when I need a quick snack!

Emerald 100 calorie pack dark Chocolate Almonds. I absolutley love these!!!!

– Individual packs of Trader Joe’s trail mix. I love all things Trader Joe’s and have kept these in my car for when I really need them!

Unreal Candy Coated Chocolates with Peanuts! these are healthy M&M’s with no hyrdogenated oils, corn syrup, artificial ingredients, GMOs, or preservatives! These are so fantastic! Now I just have to find out where I can buy them!

Sue Bee BBQ Sauce. This one was really cool because her note said that her grandparents have beehives on their property, and they sell the honey to this company. I thought this was a great personal touch to the package!

Wild Garden To-Go Hummus. I thought this was a really cool idea, it just lacked in the flavor department.

Pure Cherry Cashew fruit & nut Bar. I havn’t tried this one yet, but it sounds so good!

Yummy Brownies

Good morning! How is everyone doing? I know its been quite some time since I’ve updated the blog, but life has been so busy. Last time we talked, I had just had my wisom teeth removed, and I eneded up getting a horrible infection. Thankfully, we got all of that taken care of, and I’m feeling so SO much better! Also, I don’t feel like I can continue this post without saying how sad I am over the Boston bombing. It makes me feel angry and sad for our country! Please continue to pray for the families and victims of this tragic event. 

Workout:

I arrived at the gym of my usual Tuesday/Thursday time of 6:30, only to then look at my phone and see that my group workout had been cancelled… Really? However, since I was already there I decide to just hop on the treadmill for a quick round of run/walk intervals. I spent about 30 mintues just playing with the speed and incline, before heading home!

Breakfast:

With my workout complete extra early this morning, I showered before making me some breakfast. I made a scrambled egg bowl with lots of veggies!

I added in a chopped tomato, a bunch of spinach, 1/2 a green bell pepper, and some onion all topped with salsa. I also toasted a whole wheat sandwich thin with a little honey butter and cinnamon.

Now that breakfast is taken care of, I want to share a new yummy recipe with you. I am entering a contest with Pompeian Grapeseed Oil. In order to enter, I had to use a recipe replacing my regular cooking oil with Pompeian’s grapeseed oil. What better thing to make than brownies? Everyone loves brownies, Right? Like many oils, grapeseed oil has some great health benefits:

– Rich in Vitamin E

-High in Polyunsaturated fats

-High in Omega-6

How the recipe, so you can enjoys these too!

Pompeian Grapeseed Oil Brownies:

Serves 12

-3/4 cup all-purpose flour

-2/3 cup powdered sugar

-3 tbs. unsweetened baking cocoa powder

-1/2 cup chocolate chips

-1 1/2 tbs. Pompeian Grapeseed oil

– 1/4 cup sugar

– 1 1/2 tbs. corn syrup, diluted in 3tbs. water

– 2 tsp. vanilla

-1/8 tsp. salt

-1 egg

1. Preheat oven to 350F. In a large bowl, mix flour, powdered sugar, and cocoa powder. 

2. In a microwave safe bowl, melt chocolate chips in 30 second intervals. When melted mix in oil, salt, corn syrup mixture, vanilla, and sugar. Stir until sugar is dissolved. Stir in egg until well blended. Slowly mix in dry ingredients and mix well.

3. Pour batter into a greased 9×9 pan. Bake for 20-24 minutes. Mine were perfect after 22 minutes. Allow to cool and enjoy these delicious brownies!

Turkey Taco Chili

Welcome to Tuesday! How was the rest of everyone’s weekend, and their Monday? Mine have been full of more mashed foods, and long naps. I’ll be honest, I sure thought I would be back to work by today, and able to get in a light workout. However, that is not the case. I still can’t eat anything more that mush or liquid, and workouts are definitely not happening. Unfortunately, the pain just now started to set in and I have no energy, but I’m not going to be all down about it. I’m going to take this extra time to rest and restore my energy since I never get the chance otherwise.

Now onto a new recipe for you all. I’m sure ya’ll are not interested in the pictures of what I have been living on for the past few days, so let me share this delicious dinner with you.

Turkey Taco Chili:

Serves 10

Originally adapted from Weight Watchers

Ingredients:

– 1.5 lbs. ground turkey

– 15 oz. Stewed tomatoes

– 28 oz. Ro-tel

– 1/2 large onion, finely chopped

-1 pkg. taco seasoning

– 1 pkg. ranch dressing mix

– 15 oz. each chili beans, pinto beans, and corn

– salt and pepper, to taste

1. Brown turkey in a large skillet. Add in chopped onion, taco seasoning, and ranch mix. Add salt & pepper to taste.

2. Combine meat mixture and all other ingredients in Crock-pot, and allow to simmer on low for 6-8 hours.

3. Top chili with sour cream, shredded cheese, avocado, tortilla chips, and salsa if desired.

There you go! Easy as that, and this stuff is amazingly good! As soon as my mouth is healed up, I’ll be making this for dinner!

Jell-O at Midnight

How is everyone’s Sunday so far? Anything fun going on today? I’m still resting and recovering from my Wisdom teeth surgery, so it is pretty quiet over here. I have come to one conclusion while being stuck in the house with nothing else to do. I don’t think I will ever want mashed food or a liquid diet ever again! Okay, I will still want my oatmeal and mashed potatoes, but I just want to chew real food. This is what yesterday’s eats looked like, and probably will be the same for today…

Breakfast:

Oatmeal is my go-to breakfast anytime. It keeps me full and satisfied, and it has been the best option for a healthy breakfast when I can’t chew.

The usual oats + unsweetened chocolate almond milk + water. I topped it off with creamy peanut butter (oh, how I want some crunchy pb right now!), and today I ended up mashing a banana in my oats. I am seriously lacking in the produce department. There are not many vegetables and fruits that can me mashed and just swallowed.

Lunch:

My lunch yesterday was a Slim Fast Cappuccino Delight, and it was….okay.

It helps me get vitamins and minerals I am lacking right now, so it will have to do. The Cappuccino flavor left a yucky taste in my mouth, but it also cured my craving for a big cup of coffee.

Dinner:

More mashed sweet potatoes…

and I have also been sipping on chicken broth.

Right now I am hoping to change my meals up a bit today, maybe try out some Mac n’ Cheese?

Since I am taking pain meds every 4-6 hours, I have to eat something before taking the medicine. I usually wake up around 2 in the morning needing some meds, so I end up snacking on some sugar-free Jell-O. Nothing sounds too appetizing at those very early hours.

Red and Blue Jell-O will always remind me of going to Luby’s with my grandparents when I was little. We always got to pick a bowl of Jell-O to go along with our meal, and these were the colors I picked every time!

Other snacks have included more Chick-fil-A Icedream, and Blue Bell No Sugar Added Dutch Chocolate.

Thank you Blue Bell for this variation, otherwise I would be as big as a house considering the amount of ice cream I have consumed over the past few days.

I have also been sipping on Vitamin Water Zero and PowerAde Zero to stay hydrated.

Bye-Bye Wisdom Teeth

Hello! Just popping in quickly today for a quick update. I have had quite a busy week, and lots have been happening. Not too much in the workout department, but as soon as I’m healed(i’ll explain in a minute), I’m planning on starting my Triathlon training! I have a couple new recipes to throw out there, but first anyone want to know what I did today?

Well, today was the day I said good-bye to my wisdom teeth. I had a scheduled appointment for the surgery at 11:30 this morning. If there is anything I hate about surgery, it is that I can’t eat or drink after midnight! I was starving, especially since by the time I was at the dentist I typically would have already eaten breakfast and a snack. Thankfully, as soon as they gave me that glorious medicine, I was out and didn’t know a thing. My mouth was extremely numb, and still is. Not a fun feeling!

Today’s eats have all been of the soft or mashed variety. As soon as my parents brought me home, my wonderful mom went and got me a Chick-fil-A chocolate milkshake. It hit the spot, I ate about half before taking my first dose of  pain meds.

I then froze the other half for later, which I just finished up before typing the post.

Funny to think that this is my first CFA milkshake in a very long time! Sadly, I normally would never allow myself such a treat, which you can read more about here. This thing was good considering my small amount of food choices at the moment.

My mom also made a patch of mashed sweet potatoes, which I have been trying to eat.

I just don’t have too much of an appetite. Funny thing is the only thing I want to eat is ice cream. Well that, and peanut butter, but to thick of a consistency post-surgery. Bummer!

 

I think the hardest part is that I can’t workout for several days, since I have stitches in my gums. Any suggestions on how to ignore the itch to get out and run or swim? Its going to be a long next few days, but  am going to use this time to be productive with school work, and creating my new training plan!

Foodie PenPals March 2013

Good Morning! I have something really fun to show ya”ll today! This past month I decided to participate in the Foodie PenPals program started by Lindsay at The Lean Green Bean! If you want to learn more about it and how to participate check this out!

This month I received my package from Karey from Nutty About Health. She sent me a few of here favorite items, and I was so excited about digging right in!

First thing I tried was this trail mix that had me jumping from excitement upon seeing it!

All I saw was the words “peanut butter cup”, and I was tearing the bag open. This stuff is GREAT, and bonus: Its from Trader Joe’s!

Next I tried this new to me peanut butter.

This was perfect for my peanut butter collection that I have going on in the pantry (I currently have about 9 different kinds stock piled!) This stuff was good, and very different from any other find I’ve tried. You can definitely taste the raspberry and white chocolate distinctly! 

I have not tried this treat yet, but I am looking forward to it!

Almond Pecan Maple granola just sounds absolutely amzing! I’ll have to add some to a cup of Chobani!

And then there was this dessert like Larabar!

Banana Bread is one of my favorite treats, and the fact that Larabar has so few ingredients, but tastes just like the real thing makes it a big favorite of mine!  So delicious!
