Conscious Box

Hey there! How is everyone doing half-way through the week? I’m doing pretty fantastic considering I had the day off work! I ended up sleeping in this morning. No workout since I am taking a few days off running to recover from my half marathon, and I had a pretty intense upper body workout yesterday.

Breakfast:

OIAJ! This is the first time I have tried this, and now I can’t wait to finish another jar of peanut butter! So good!

Lunch:

I made a BLT with wheat bread, lettuce, tomato, Morning Star veggie bacon, and a little guacamole. This was also a winner today, which was paired with some leftover tortilla soup.

After lunch I went and had coffee with some friends that were home for spring break, and it was really great to see them! I came home knowing that we were dining out for dinner and that it was several hours away so I made a little snack to tide me over.’

Wasa crackers( 2 with PB2, and the other with Biscoff spread). This kept my hunger in check until dinner.

Dinner:

Steak ‘n’ Shake was on the menu for dinner, and I ordered the Turkey Club sans mayo.

And instead of the heaping portion of fries that are served with every meal, i replaced it with a cup of vegetable soup.

Dinner was good, and a nice change. I may have also had one bite of my sister’s peanut butter cup shake 😉

My First Half-Marathon!

Hi there! I know it’s been quite a few days since I’ve posted, but I’ve been super busy, and sometimes blogging just gets pushed to the side. However, I did want to stop in and give a small recap of my very first Half Marathon! I still can’t believe it! I never really got a lot of chances to take many pictures, but I do have a few!

This past Sunday, I ran the Rock ‘n’ Roll Dallas Half Marathon! I woke up at 5:30 on race morning ready to go, but still really nervous!

I had all of my gear packed and ready to go, doing my best to insure that I didn’t forget anything!

And I packed a pre-race breakfast of bagel w/ peanut butter, and a banana.

It was hard to eat that early in the morning, but I knew that I had to fuel my body right if I was going to accomplish the race ahead. My dad and I left the house and rode the DART train to the Dallas Convention Center, along with a friend from work, and her brother.

The weather was dreadful, being under 40 degrees and winds up to 21 MPH. It was not the ideal racing weather. The first wave start started promptly at 8 AM, and we were off. The course wound through downtown Dallas, and I really enjoyed all the scenery and sights downtown has to offer. My only complaint is that there were quite a bit of hills along the way. There were water stations and 2 miles or so, and Gatorade at every other station. There were also live bands at every mile, and I really enjoyed the Dolly Parton  impersonator. There was also a GU station at mile 9. At mile 6 I had a peanut butter GU, and then had a Vanilla Bean GU at the aid station. I was foolish, and those were the only times I took fuel. I probably could have used a little more. By Mile 10, I was ready to be done. At this point, I had mentally blocked out the music playing on my IPod, and no longer cared about my surroundings. I just wanted to make it to the finish line! At mile 12, I could see the entrance to Fair Park, and I knew if I could just make it there, it would be almost over!The last .1 mile of the race was the most inspiring part with so many spectators cheering you to the finish! As soon as  I passed my family and slowed long enough to smile for a picture, I sprinted to the finish line! I was done! I had set a goal 12 weeks ago, and accomplished it! Immediately after, I was handed my medal!

It is beautiful! I was also handed tons of food and drinks at the finish line that I culdn’t even carry. I was given water, Gatorade, chocolate milk, a sample Jamba Juice, a banana, and chips. I downed the chocolate milk, water, and banana, and tried the smoothie, but it was too icey.

After finding my family, and making the very long walk back to the car, I decided that Hard Rock Cafe would be perfect in fitting the theme of the race. I had the California Club no mayo with a side salad, and a small amount of fries. Still no picture, I dug face first into the food as soon as it was in front of me.The rest of the day was spent lying around, including a 4 hour nap. It was the greatest experience, and I’m already planning my next race! Any suggestions?

What I ate Wednesday

I have decided to to my very first edition of What I ate Wednesday using my eats from Tuesday, since today I will be eating at work most of the day.

 

Breakfast:

Today started out with an hour of strength training at the gym before I headed home to make a delicious smoothie!

I made it with a blueberry Chobani, 1/2 frozen banana. 1/2 cup raspberries. unsweetened chocolate almond milk, vanilla protein powder, and 1 tsp. peanut butter. It was perfection! It was gone in no time! I also had a sandwich thin with a little extra pb, too.

Mid-morning Snack:

Fruit salad made with 1 chopped honey crisp apple, and a handful of fresh raspberries. i’m loving these raspberries right now!

Lunch:

I had the rest of my Bear creek Tortilla Soup with spinach mixed.

And some shrimp and Texas caviar on the side.

If you have never had Texas Caviar, you must try it. It is a mix of black-eye peas, corn, and other  veggies! Yum-yum!

yesterday was full of yummy eats, and now I’m said to say that I must sign off and head to a long shift at work today 😦 I’ll check back in tonight with another fun post!

A little more interesting.

FRIDAY! Just two more shifts at work today and tomorrow and I’m done……until Monday, that is. But, hey, it’s still the weekend! Unfortunately, no workout happened today due to a lack of energy and motivation. I have had a heavy schedule at work this week, and it is really starting to catch up with me. Some days it is alright to skip a workout in order to let your body get some needed rest. And that is exactly what I did today!

 

Breakfast:

Breakfast this morning was filled with lots of nutrients to fuel me for the rest of the day!

2 eggs with spinach, along with a toasted sandwich thin. Simple as that.

I zoomed through schoolwork and chores since I have an early shift today, and consumed lunch while catching up on the blog.

Bear Creek tortilla soup mixed with brown rice, spinach, and some leftover chicken.

Now it is off to work. And it just got a little more interesting. My brother just got a job at the same place I work. I am one of his supervisors, so this should be fun 😉 I’m really excited to be working with him. We get along really well for the most part, and I don’t think it will be a problem at all.

Random workout, Random Meal

Thursday has creeped up on us once again, which means it is almost the weekend! Yay! Today’s workout was another made up circuit by yours truly! There really is no rhyme or reason to how I came up with it, but it gets the heart pumping early in the morning (or whatever time of day you choose).

This lasted about 30 minutes, which gave me a good start to my day!

Breakfast:

Breakfast was another randomness of sorts, which included an egg w/ ketchup, a clementine, and a yogurt mix.

For my yogurt mix I used a strawberry Chobani mixed with trail mix and a Quaker breakfast cookie….Image

Yes, you read that right! A cookie made with healthful ingredients designed to be eaten for breakfast. I’m one happy girl!

I had a coupon so I thought I’d try some! They did not disappoint!

I grilled a Boca veggie burger, and sauteed some spinach to make a delicious mid-day meal! I also topped it with a little mozzarella cheese, shredded lettuce, ketchup, and mustard. Served with a sliced red bell pepper, pickle spear, and some BBQ sauce for dipping. I honestly prefer these burger patties over the real deal! 

Now I’m snacking on some strawberries while typing up this post before heading to work! Have a great Thursday!

Serious Circuit Workout

Happy Tuesday! I thought I would start today’s post with a really good workout that I used this morning. I used my Fitness pins on Pinterest for my inspiration.

This is a Serious Circuit: Repeat each circuit 3x, resting 1 minute between each new circuit.

All followed by 3 rounds of this Ab Circuit:

– 1 min. Bicycle crunches

– 1 min. Russian twists

– 1 min. reverse crunches

This workout is a bout 45 minutes in time, and it keeps you moving. great way to start the day!

Oatmeal made with 1/2 cup oats, mashed banana, cinnamon, and peanut butter! Filling and satisfying after a good sweat session!

I’ve been working on homework all morning. Yes, it is Spring Break and I still have homework. I have a big Spanish project due in a few weeks that I must get to work on! After all school work was said and done, I dug into some lunch while catching up on my favorite blogs and last night’s episode of The Biggest Loser.

I simple toasted 2 corn tortillas in the oven, and topped them with spinach, American cheese, turkey, and little shredded mozzarella.. They were perfect and refreshing.

I finished lunch with a honey crisp apple and some PB2.

Let me tell you, PB2 may be one of the best things since sliced bread. Low calorie, low fat peanut butter? Yes, please!

I’m now snacking on a Kashi Crisp Chocolate Pretzel bar before heading off to work. Enjoy the rest of your Tuesday!

I want my hour back!

Hello friends. is anybody else having a hard time with the whole time change? I sure do want that hour back. Surprisingly, it didn’t bother me yesterday, and I was up at 8 on a Sunday morning for a 10 mile run. This is my longest run to date, and it is my last long run before my half-marathon next weekend! I finished in just under 2 hours. Not bad…not bad. Since yesterday was pretty intense, I’m using today as my off-day from workouts!

Fiber One 80 calorie chocolate cereal  strawberries, and photographed before the unsweetened chocolate almond milk. Super simple, since I was a bit pinched for time after sleeping through my alarm and waking up at 9:30. Oh well! 

 

I had a productive morning of school work and such before running a couple quick errands and breaking for lunch. Just a frozen Lean Cuisine Spinach & Mushroom Pizza with extra spinach for an easy lunch. re you sensing a theme with today’s meals? Quick and easy!Image

Happy 16th Birthday, Jon!

Happy Sweet 16 to my little brother, Jon!

Today we celebrated 16 years of life for one of the best brother’s a sister could ask for! I made sure his B-day by making some awesome waffles! Cinnamon Roll Waffles that is!

These are not healthy by any means, but we are celebrating so it is all okay. These waffles are a super, simple treat. All you have to do is prepare a box of cake mix as instructed( I used a french vanilla mix), and add 1 tsp. cinnamon and 1 tsp. vanilla. Heat up your waffle iron and cook them each until ready. If these aren’t already sweet and decadent enough, the topping takes the cake waffles 😉 To top these off all you need is Duncan Hines Frosting Creations with the cinnamon roll flavoring packet..

Mix the icing and flavoring together in a microwave safe container, and heat for 15-30 seconds. Simple drizzle over the dessert-like breakfast and enjoy!

While the waffles were cooking we let him open up his birthday gifts…

He was a happy birthday boy!!!

We spent the morning working on school work and such before making a quick lunch, and a running a few errands.

Nothing fancy here. It was simple a Lean Cuisine Grilled Chicken & Penne Pasta on top of a bed of lettuce and some extra veggies to bulk up the meal a little bit. Those frozen meals never really feel me up, so I always add something extra to make it a little more filling.

We spent the rest of the afternoon running errands. When we came back home I made sure to get a little bit of a workout squeezed in for the day. I did a hodge podge of different cardio and strength moves for about 20 minutes, and then there were quite a few rounds of Just Dance played for an extra sweat session. I’ve said it before that that game gives you one heck of a workout, while being fun at the same time.

As soon as I had time to freshen up, and my grandparents arrived we headed off to the birthday dinner. My brother chose Cheddar’s, one of our family favorite restaurants.

We started off with some chips and salsa…

I snagged a few with lots of salsa.

While we waited for our food, I might have been distracted by the big fish tank that was right at our table.

For my main entree I had the Grilled Tilapia with Mango Salsa topped with grilled shrimp and a bed of rice, and the choice of two sides. I chose steamed broccoli and a plain baked potato.

I ate all the fish, shrimp, and broccoli. I left most of the rice, and only finished half of the potato. It was really good. It was perfectly salty, while the mango salsa added the right amount of sweetness to the dish. We skipped dessert at the restaurant in favor of some cookies waiting at home.

These are the BEST cookies in the world. They are from Kroger’s bakery. They are just plain sugar cookies that are topped with some kind of icing. Nut they are so good. I split one with my Mimi, and it was the perfect amount to satisfy my craving. OK,  ok…… there may have also been a stop for soft-serve ice cream that went unphotographed , and I split that with my mom. Now that I’m completely stuffed, it’s time to watch the new Duck Dynasty episode, Jack!

Gets Me Every Time

Almost done with Tuesday, and almost halfway through the week! Was everyone’s day great? I hope so 🙂

Workout:

My day started off promptly at 7 this morning with a trip to the good old treadmill for a short 4 miler. I snacked on a Quaker  Chocolate Chip Chewy bar on the way there for some fuel…DSC_0620

 

 

I ran an easy 4 miles plus some at about a 12 minute pace.

I just wasn’t feeling it today, and my legs felt like I was moving through sand. Hopefully ill feel a bit better for tomorrow’s run!

After the gym I headed on over to Target to pick up a a present for a very special birthday tomorrow! The little brother is turning 16!!!! Such an exciting age! Now, I know I’m not the only one who gets sucked in at Target, and leaves with way more than that one thing you meant to purchase! Who else has this problem??

Breakfast:

This morning was a smoothie kind of day, so I made the ever famous Green Monster.

Unfortunately, it was not the best I’ve made, but it refueled after my workout.

What went in the blender?

– 1 strawberry Chobani

– 1/2 cup unsweetened chocolate almond milk

– 1 banana

– 4 strawberries

– 1 Clementine

– handful spinach

– 1/2 scoop vanilla protein powder

Too bad it didn’t meet my expectations for this morning’s breakfast. Those smoothies really can be a hit or miss.

After a few hours of school work, I made a quick lunch before heading to Spanish class. Super simple today with Brown rice, salsa, and mushrooms microwaved together…

Class was alright except for the whole not-so-awesome score on my Spanish quiz! Oops 😦 I wasn’t feeling very well when I got home, so I watched my DVRd episode of  The Bachelors: Women Tell All. All I can say is WOW! AshLee definitely through Sean under the bus! But it didn’t fail to be entertaining!

Dinner:

I was on my own for diner tonight since everyone was running in all different directions. My go-to was a salad filled with lots of veggies and whatever I could find!

I used a base of spinach and shredded lettuce filled out with 1/2 a piece of leftover BBQ chicken, green beans, a chopped tomato, kidney beans, ricotta cheese, a few croutons, mushrooms, and lots of salsa for the dressing!

It was good, but not as good as what came after dinner…

I made a small homemade sundae with 1/2 a banana, 1/2 cup Blue Bell No Sugar Added Strawberry Ice Cream , and a tablespoon of trail mix. So yummy, and a perfect way to end the day along with this week’s episode of Pretty Little Liars!

Can’t Wait for Taiwan!

This morning was started at 8 for a nice, long 8 mile run. I guess you could call it “8 at 8”!  As soon as that was done with and over I hurried home for some much needed breakfast. I had breakfast a lot later than usual today, and it really threw off my appetite for the rest of the day.

Oatmeal, made with 1/2 cup unsweetened chocolate almond milk, cinnamon, peanut butter, a mashed banana, and blueberries. This really hit the spot and refueled me after this mornings workout!
The rest of the day was spent lounging around, and catching up on old Tv shows. Not many food pics were taken today. I did spend a couple hours in the kitchen.and will have some recipes for yall within the next few days!
I ended the day with a meeting for my upcoming mission trip this summer. A group of 6 of us will be heading to Taiwan. I’m so pumped! Just not so pumped about how much money it is going to cost!
