Apple Spice Muffins

Hello people! Hope everyone’s Wednesday is ending on the right foot! Mine was good except for the fact that my allergies are driving me crazy right now! I just got off work, but i decided to stop in since it’s been several days! Oops! ūüė¶

Workout:

Today’s workout was a 5 mile treadmill run. It’s getting easier and easier, and my half marathon is less than a month away! I’m so excited/ nervous!

Breakfast:

Breakfast this morning was a homemade burrito made with a Flatout Multi Grain w/ Flax wrap, an egg, spinach, black beans, and salsa. Along with a clementine and some trail mix. It was the perfect way to recover after my run!

Fast¬†forward¬†a few hours later and it was time for lunch…

A pouch of Lemon Pepper tuna, black beans, and feta served on a bed of iceberg lettuce and spinach. I used black bean corn salsa as the dressing. It hit the spot.

 

Now it’s time for a new recipe!

Apple Spice Muffins

Ingredients: (Originally adapted from Undressed Skeleton)

– 1/3 cup egg substitute (such as Egg Beaters)

-1 cup apple pie filling

-1/2 cup unsweetened applesauce( could also use cinnamon applesauce)

– 1 tsp vanilla

-1 cup wheat flour

-1/2 cup sugar

-1 tsp baking soda

-3/4 cup oats

-1 Tbs. cinnamon

-1 tsp nutmeg

  1.    Preheat oven to 350 F.
  2. Beat egg substitute, pie filling, applesauce, and vanilla with mixer.
  3. Slowly add in all dry ingredients. 
  4. Pour 1/3 cup of batter into each muffin liner.
  5. Bake 20 minutes.

Hope you all enjoy this recipe! I ate one before my run this morning, and they are very good!
