Apple Spice Muffins

Hello people! Hope everyone’s Wednesday is ending on the right foot! Mine was good except for the fact that my allergies are driving me crazy right now! I just got off work, but i decided to stop in since it’s been several days! Oops! ūüė¶


Today’s workout was a 5 mile treadmill run. It’s getting easier and easier, and my half marathon is less than a month away! I’m so excited/ nervous!



Breakfast this morning was a homemade burrito made with a Flatout Multi Grain w/ Flax wrap, an egg, spinach, black beans, and salsa. Along with a clementine and some trail mix. It was the perfect way to recover after my run!

Fast¬†forward¬†a few hours later and it was time for lunch…


A pouch of Lemon Pepper tuna, black beans, and feta served on a bed of iceberg lettuce and spinach. I used black bean corn salsa as the dressing. It hit the spot.


Now it’s time for a new recipe!

Apple Spice Muffins



Ingredients: (Originally adapted from Undressed Skeleton)

– 1/3 cup egg substitute (such as Egg Beaters)

-1 cup apple pie filling

-1/2 cup unsweetened applesauce( could also use cinnamon applesauce)

– 1 tsp vanilla

-1 cup wheat flour

-1/2 cup sugar

-1 tsp baking soda

-3/4 cup oats

-1 Tbs. cinnamon

-1 tsp nutmeg

  1.    Preheat oven to 350 F.
  2. Beat egg substitute, pie filling, applesauce, and vanilla with mixer.
  3. Slowly add in all dry ingredients. 
  4. Pour 1/3 cup of batter into each muffin liner.
  5. Bake 20 minutes.

Girl Scout Cookies Are Here!

We are over halfway through the week! How is everyone doing so far? I’m am excited this week¬†because¬†on Tuesday we got our order of Girl Scout cookies! This may be one of my favorite times of the year! ūüėČ



This year we ordered two boxes of Tagalongs, two boxes of Do-si-dos, a box of Savannah Smiles(my new favorite), and my old favorite Thin Mints!

I saw this on Pinterest, and thought it was hilarious! And kind of true ūüėČ I have to agree with Julie over at PB Fingers, that Thin Mints are best after sitting in the freezer! These cookies will become a part of my¬†daily¬†food groups for the¬†next¬†couple of weeks!


After talk of Girl Scout cookies, I think it is only fitting to discuss my workout from this morning. We started off with some arm work:

( 3x through)

– Inverted Rows (10 reps)

-Overhead press (10 reps, 20 lbs.)

-Chest Press (10 reps, 50 lbs.)

–¬†Push-ups (10)

Then it was time for some cardio to get that heart rate up!

(2x through)

– Burpees (10)

-Jump Squats (down and back across the gym)

– Weighted Squats (10 reps, 30 lbs.)

– Box Jumps ( 20)

Last, we moved onto abs:

– Bicycle crunches (25)

– In-outs (25)

-Crunchy frogs (25)

– Reverse crunches (25)

-Russian twists (50)

– Oblique Crunches (25 each side)

It was a challenging, good way to start the day!




A toasted sandwich thin, a quarter cup trail mix, and an egg scramble.



1 egg, 1/4 cup egg beaters, 1/4 green bell pepper, sliced mushrooms, topped with black bean corn salsa. Yummy.


Now it is time for school work, and then a crazy, busy shift at work. Have a great Thursday!

Peanut Butter Oatmeal White Chocolate Cookies

How was everyone’s Tuesday?!? It’s almost over, and I’m ready for Wednesday.


Today’s workout started out at 6 AM with a 3 mile run on the treadmill. When my workout buddies arrived, we headed to the weight room. Today’s sets looked something like that:

Set 1 (3x through):

-Bicep Curls (20 reps; 10 lbs.)

-Triceps Extensions (15 reps; 20 lbs.)

-Chest Press ( 10 reps; 50 lbs.)

Set 2 ( 2x through):

– Leg Press( 15 reps; 120 lbs.)

– Leg Extensions (15 reps; 50 lbs.)

– Hamstring Curls (15 reps; 20 lbs.)


– Crunches (50 reps)

– Reverse Crunches (30 reps)

– Bicycle Crunches (25 reps)

– Oblique Crunches (25 reps each side)

– 1 minute plank


ImageBreakfast was quickly made and inhaled upon arriving home. I toasted a Nutrigrain Blueberry Waffle, and served it with a Honey Crisp apple and a Mini Babybel Light. I also created a delicious cup of yogurt.

ImageI topped a blueberry Chobani with some fresh blueberries, a tablespoon each of trail mix and Kashi GoLean Toasted Berry Crumble.

   After breakfast, I finished up some math, Spanish homework, and chores. I kept myself busy until it was time for lunch.




I made a huge, delicious salad that was so satisfying. I used a base of romaine lettuce and spinach. It was all topped off with a pouch of Starkist Sweet & Spicy tuna, diced cucumber, sliced mushrooms, corn salsa, leftover sliced potatoes, and black bean corn salsa. It was sooooo good.

Shortly after finishing up lunch, i headed off to Spanish class. When I got home, I got started on a batch of cookies that I had been waiting to make all week.

ImageI followed this recipe almost exactly, except I used half peanut butter and half biscoff spread. They were a huge hit with my family, and they are GOOD!

New TV Obsession

Looks like we’ve made it to another Monday! How is it treating everyone so far? Mines been pretty ordinary.

I started my morning of at 7 with a six mile run.


The distance in the picture only says 5 because the treadmill sort of freaked out on me right after completing the first mile. But I assure you that I did indeed run 6 miles. This is my longest run since completing the Hot Chocolate 15k a little over a week ago.

Breakfast was consumed immediately after arriving home from the gym this morning.



I toasted 2 slices of whole wheat bread, and topped it with a wedge of Laughing Cow Original Swiss, some turkey, and sprinkles of Parmesan cheese and parsley. It was very savory, and satisfied me after a tough workout. I enjoyed it with slices of Honey crisp apple and peanut butter.

The remainder of my morning was spent checking email, chores, and school work. Which leads me to my newest TV obsession. While I was working on making flashcards for Spanish class, I caught up on recorded episodes of this season’s The Bachelor. I really never was a fan of The Bachelor until recently. I didn’t have any interest in watching it until I found out that he was from Dallas, and his sister, Shay, also has a blog called Mix and Match Family. Now I can’t stop watching it. I finally caught up on the season, and I will have to DVR tonight’s episode since ill be working when it airs.



I topped a bed of spinach and sliced mushrooms with a breast of Parmesan chicken along with spaghetti and marinara sauce. I also roasted up some asparagus spears to eat along with it. Filling and satisfied my craving for Italian food!

Now its off to a 7 hours work shift for me! Enjoy the rest of your Monday!

Safe Haven

How was everyone’s Sunday? Mine was pretty fantastic!

To start off, my mom and I went to get our nails done….


Not quite sure why they wrapped my hands in foil claws, but it made for a good picture! Haha! But the end result was great!

Lunch was a little later than usual, so I tried to keep it light since I had dinner plans with a friend tonight.


A yummy salad, made with romaine, spinach, black beans, corn salsa, roasted bell peppers, chicken, and salsa as the dressing. It held me over until dinner rolled around.

A few hours or so later, I met my friend Stephanie for dinner at Brooklyn’s Pizzeria, before we caught a showing of Nicholas Spark’s movie Safe Haven. For dinner, I had the Rustica Chicken Salad.


To be honest, it really didn’t knock my socks off. There was too much onion and olives, and not enough variety in the salad. I wished I had gone with a slice of pizza. Oh Well!

Aside from my below average dinner, the movie was fantastic! I usually prefer a good comedy when going to the movies, but this was a great movie with a great¬†story line! I highly recommend seeing it if you¬†haven’t¬†already!

I’m off to bed for my early morning run! Sleep well!

OBU Scholarship Recognition

Happy Sunday! 

This weekend I have been away in Oklahoma visiting my soon to be college. Within the last year I decided that I will be attending Oklahoma Baptist University starting this coming fall. Yesterday I got to be a part of the scholarship recognition ceremony, which was very exciting, and gets me pumped for the coming months.

And I brought the whole family along too ūüôā

It was a fun weekend, and I already love the school!



We are now back home in Texas, and enjoying a restful Sunday. I started my day off with a quick breakfast to get me going.



A toasted sandwich thin topped with Peanut Butter & Co. White Chocolate Wonderful, some dried cherries, and those would also be my vitamins on the plate. I also had a glass of unsweetened chocolate almond milk. 

I’m off to run some errands with mi madre. I’ll check back in a little later! Hope everyone’s Sunday is a great one.

Back from the Weekend!

Sorry for the long break in posts! It has been busy around here! So I think I’ll pick up on Saturday when I made a huge accomplishment that I didn’t think I could do! Saturday morning I was up at 5 am getting ready for my first 15k! My mom and I did the Hot Chocolate 5k/15k. She did the 5k, and I challenged myself with the 15k. I was so nervous. I had only made it to about 6 miles in my training so I.was going a little over 3 more miles than I had ever done. In the end I ran the whole 9.3 miles and I paced myself with an 11 minute mile the whole way through. I finished faster than I anticipated, and it wasn’t as hard as I believed it would be. I met my parents at the finish line…..


Finishing strong! Afterward we headed over to the post race party to get our Finisher’s mugs.



Complete with hot chocolate, banana, chocolate fondue, marshmallows, pretzels, and a mini rice krispie treat!


I was so excited with my accomplishment, and it got me even more excited for my upcoming half-marathon next month. Unfortunately, I had to go to work afterward. My legs were killing me, and still sore today. ūüė¶ Overall, Saturday was a pretty excited and exhausting day! Yesterday, I went with my brothers, sister, and our friend Ben to Exposure, an indoor rock climbing facility. I decoded to just watch them climb, since my legs were still recovering, and really hurting.



I mostly just had fun watching them climb. Especially when they were attempting the the slanted walls. I get dome good entertainment out if that one:) Today I’m still taking it easy with the workouts. I spent about 20 minutes this morning just stretching, and I have an 11 hour shift at work today, so im doing my best to rest as much as I can.

-half scoop vanilla protein powder

And my last bit of trail mix on the side.
