Exciting!

We are just about halfway through the week! Yay!

Workout:
So I was planning on geting up, and running this morning, but when my alarm went off at 7 I couldn’t get up. Sometimes sleep is just as important as Getting a workout. If our bodies are not properly rested, they cannot perform well in our workouts and studies show it often leads to over- eating during the day! Don’t want that now do we? So with an extra hour of sleep, I woke up rested and ready to take on the day. At about 11 this morning a did a session of P90X. It was a perfect switch up from my usual run ūüôā

Breakfast:
It came together quickly, and I devoured it!

Eggo Nutrigrain Blueberry waffle with a spread of Peanut Butter & Co. White Chocolate Wonderful pb. Served with a side of mixed frozen berries, and that may possibly be a dollop of fat free Cool Whip ūüėČ just a little somethin special! And of course breakfast did not go without the regular cup of coffee. I recently found the most dessert like coffee ever….

I was able to get quite a bit of school work done, and got my workout in before lunch! That extra hour of sleep was a good thing!

Lunch:
Todays lunch was just kind of thrown together today, so it looks a little sloppy:/

All that was left were the heels of the bread loaf( why is this always my least favorite part of the loaf?). So rolling with that, the two slices were filled with turkey, mustard, and shredded lettuce. Combine that with a honeycrisp apple and it was s decent lunch. Those apples make any meal or snack good:)

So like I Said the other day, work has been pretty exciting lately, and that is because last Friday I was promoted to a supervisor. This is really exciting for me, because it is something I’ve been working towards for quite some time! However, I’m feeling a bit nervous about the extra responsibility, but I’m going to do my best! Today will be my first full shift in my new position, so wish me luck:) Well that is it for today! Hope the rest of everyone’s day is super!

Let’s Get this Week Going!

Happy Monday! I’m ready to get this week going, and I hope it goes by fast, just like the last few weeks have!

Workout:

Another early morning run today! I did 5 miles, in under an hour, which is pretty good pace for me!I still have a little under 2 months before my Half Marathon, and I’m really starting to get excited, as well as really nervous! In about two weeks, I’ll be running my first 15k (9.3 miles) at the Hot Chocolate run in Dallas! Right now I’m mentally preparing myself for that long of a distance. The most I’ve ever done is 6 miles, so this will be a bit longer than I’m used to. However, I just keep telling myself that it is just 3.8 miles short of a half marathon, which helps me¬†believe¬†that I can do both races if I just set my mind to it!

Breakfast:

Today was one of those days where all I could think about after workout was a smoothie. So that’s what I rolled with…

Doesn’t that green color look so¬†appetizing? Thankfully, it tasted way better than it looks!

Today’s smoothie was a mix of:

– 1/2 frozen banana

-1/2 scoop vanilla protien powder

– 1/2 cup crushed pineapple

– peach Chobani

– handful of spinach

– about a 1/2 cup of unsweetened almond milk

It was delicious, especially since i was totally random with the ingredients!

 

After breakfast, I made sure to get the rest of my¬†Spanish¬†homework done before tomorrow’s class, and I’m still in the process of studying for my Spanish quiz!¬†

Lunch:

By the time I finished all my schoolwork and got a chore or two done, It was lunch time. And I was ready to eat!

Starting with a couple pickle spears and several strawberries, the I made a wrap using a La Tortilla Factory High Fiber tortilla filled with turkey, diced tomatoes, feta cheese, salsa, and shredded lettuce. It was so, so good!

 

But now it is time to run off to work. Work has been very exciting¬†lately¬† and it just keeps me even more motivated to do the best a my job. It’s going to be a full work week, but I’m energized and ready to go! Have a great Monday ya’ll!

Plain Old Monday

Workout:

I was up and heading out at my usual time of 7 AM this morning for a 5 mile run. I ate a banana on the way to the gym. I kept a¬†consistent pace of a 12 minute mile this morning. May not be that fast, but at least I’m running right? RIGHT!

Breakfast:

Multigrain Cheerios, strawberries, cinnamon, later mixed with a Peach Chobani! Doesn’t get much simpler than that, and makes for a perfect post-workout breakfast!

I was productive and got lots of school work done this morning before stopping for a lunch break!

A Flatout Multigrain w/ Flax flat-bread made into a quesadilla with pepper jack cheese, and accompanied by a small side salad topped with salsa subbing for dressing.

Now its off to work for my longest shift of the week! Have a great Monday!

Here & There

Yay, its Friday! The past few weeks seem to be flying by, and I hope the coming weeks continue this way! Hey, it just means the weekend comes faster right? ūüėČ

Workout:

My days started off at 7 this morning with a 3.5 mile run, and I finished right under 40 minutes. My speed is slowly getting faster, and I also try to add more incline each week, I’m currently still¬†training¬†on the treadmill, but I’m planning on taking my long runs outdoors within the next week or so. I just need to find a pretty running trail ūüôā

Breakfast:

Breakfast was quick and easy today, making it a winner!

Two boiled egg whites, which I replaced the yolks with salsa, a banana, and some very tasty trail mix!

This stuff is seriously good! It has pretzel pieces, peanuts, peanut butter chips, and Reese’s Pieces! What wouldn’t be good with all the different variations of peanut butter???? I’m honestly surprised this has lasted me as long as it has!

 

After breakfast, I showered and made some coffee because I was off to photography class. We had a quiz today on F-stop and shutter speed, and all I can say is I hope she is grading on a curve! It was not good!

 

Lunch:

As soon as I got home, I was on the hunt for something easy and delicious.

Today it was a Lean Cuisine Butternut Squash Ravioli meal. I was a little worried about the whole butternut squash as a filling thing, but It surprised me and I’m a fan. Also, under all those veggies and pasta is some¬†leftover¬†spaghetti¬†squash (my new favorite!)

As soon as lunch was eaten my mom, brother, sister, and I left the house for a few hours to run several errands here and there! I got some great new workout apparel from Old Navy with my gift card from Christmas. I got a pair of these, and one of these cute pullovers. Next was a total necessary stop by Sweet Frog for a sweet treat!

Okay, this is actually my¬†Fro-yo¬†¬†from Yogurt Land a few weeks ago, but today’s looked a lot like this one. I just didn’t have my camera handy. We continued the¬†afternoon¬†with grocery shopping and a much needed trip to Costco. ¬†So I have to ask, does everybody else get excited about all the different samples? I always feel¬†disappointed when I go and there¬†aren’t¬†¬†any ūüė¶ Almost like it was a waste of a trip! Not really, but seriously I love the samples! The best one today was the Chili Lime Chicken Tortilla Soup.¬†Maybe¬†some of the best I’ve ever had! Speaking of tortilla soup, lets get onto dinner…….

Dinner:

Tonight my mom prepared Bear Creek’s Tortilla soup. It is so easy, all you do is add the soup mix to boiling water. Very yummy ūüôā

I¬†topped¬†my bowl with fat free sour cream, salsa, a¬†little¬†shredded cheese, and diced onion. I also had two¬†slices¬†of toasted wheat bread on the side. Now it’s time to catch up on some DVR’d episodes before bed!¬†I’ve¬†got a early shift at work tomorrow to rest up for! Night Ya’ll!

Mine would have to be fresh berries, rainbow¬†sprinkles, and¬†Reese’s¬†pieces!

 

More Motivation

I’m proud to say that I am¬†officially registered for my very first half-marathon! On March 24th ¬†will be participating¬†¬†in the Dallas Rock ‘n’ Roll Half-Marathon! I’m so excited and it gives me even more motivation to keep to my running plan and to do my best to improve!

Workout:

All this led to my 4 mile run this morning. I felt so good during and afterward. Surprisingly, today’s run was easy and ! felt really energetic. I can’t remember what my time and pace was, but I’m slowly getting¬†faster¬†and building my endurance!

Breakfast:

After returning home from my run I quickly grabbed some breakfast to refuel!

A Strawberry Chobani mixed with a crumbled Pumpkin Spice Vitatop. This was sooo good and satisfied me for a couple hours.

I showered after breakfast, and did homework for the rest of the morning!

Lunch:

Around noon I started to get really hungry so I decided it was time for lunch!

I topped a Wasa Multigrain Crispbread with a Laughing Cow Original Swiss and turkey. Lunch was also served with carrots, grapes, and an unpictured clementine. Nutritious and Delicious ūüėČ


Dinner:

It was enchilada night at this house! My dad makes the BEST enchiladas! They are a favorite of family and friends.

For mine, I baked two corn tortillas, topped with Dad’s homemade enchilada sauce (the BEST), Boca soy crumbles, shredded lettuce, fat free sour cream,¬†guacamole¬† and a tiny bit of cheese.This is one of my favorite dinners, ans will probably be one I miss the most when I go off to college.

As I was preparing to sit down and watch The Biggest Loser, I decided to do a little experimenting in the vegetable department…… Jicama!

Now I’m not to sure how I feel about this root veggie. It was really weird, and I’m not sure how to describe the flavor. Maybe it will grow on me. Time to hit the hay, another early morning run. Have to stay motivated!

Has anyone else tried jicama? Are they any other ways to eat it besides raw?

Slowly Meeting My Goals

I can’t believe this weekend has already come and gone! It went by way too fast, and i’m not ready for¬†school¬†to start back tomorrow. I started today off with a 4 mile run. It was on my training plan for the half-marathon, and i’m so glad ¬†got it done. Slowly but surely, I’m meeting my goals in running. But I will get to my ultimate goal of running a half marathon!

Breakfast:

A Flatout Flat-bread Multigrain w/ Flax filled with an egg, a slice of bacon, and Parmesan cheese. It was s good and so filling and just what I needed after a workout!   

 

Lunch:

For lunch it was one of my favorite microwave pizza dishes! Lean Pockets Spinach and Three Cheese Pretzel Bread sandwich. I also had an apple on the side!

I must say that Honeycrisp apples are the best! Crispy and sweet! Yum!

 

Dinner:

Tonight’s dinner was a Boca Veggie Pattie on an Arnold Sandwich Thin with a Laughing Cow Cream cheese wedge,¬†guacamole, and lettuce. Served with some leftover green beans to fill out the meal.

This was my first time trying a veggie burger and it wasn’t bad. I really couldn’t tell that it wasn’t meat. I would eat it again!

 

Now it’s time to watch the new season of The Biggest Loser!¬†Jillian is back everybody!
