Chocolate Iced Gingerbread Men

A few days ago I baked these cute little gingerbread men. When there is something specific I want to bake, I look up a bunch of different recipes for it, and kind of play with it to change it up a bit. So I turned to Pinterest for some help! When I was ready to start baking I headed down to the kitchen to see how they would turn out!

Chocolate Iced Gingerbread Men:

– 1 1/4 cups sugar

-1/2 cup butter, softened

-1/2 cup plain applesauce

-1 egg

-3 Tbs. molasses

-1 tsp. vanilla

-3 to 4 cups flour

-2 tsp cinnamon

-2 tsp. ginger

-1/2 tsp baking soda

-1/4 tsp salt


1. Combine sugar, butter, applesauce, egg, molasses, and vanilla in a large mixing bowl. Beat until creamy. Add remaining ingredients; beat until well mixed. Roll dough into a ball and wrap in plastic wrap. Refrigerate for 2 hours.

2.Heat oven to 375. Roll dough onto a floured surface. Roll out dough to an 1/8 of an inch with a rolling pin(I used a cup, since I don’t own a rolling pin). Cut out the cookies with a gingerbread men cookie cutter or cookie cutter of choice. Repeat rolling and cutting until the majority of the dough is used. Bake for about 8 minutes or util set. Cool on a wire cooling rack.


Chocolate Icing:

-1 cup milk chocolate chips

-4 Tbs. butter

Melt chocolate chips and butter in a microwave safe bowl in 30 second intervals. When it is completely melted, use a spatula to frost cooled cookies. Spread evenly over each cookie, and let the icing set until hardened. I also chose to add Christmas colored sprinkles to mine. Get creative!
