Now that Christmas is over, and we are bringing in the New Year, it is time to get back to the usual day to day stuff. No more holiday parties and festive goodies for another whole year. Today I go back to work, and I am still wishing it was Christmas day, but it will be nice to have a regular routine again.
Last night for dinner we had a goal to get rid of Christmas leftovers since we had so many! I ended up making spaghetti squash for the first time….and it was good, but I don’t think I did it completely right….
I topped it with some pasta sauce, and served it along with some crusted tilapia and leftover green beans. It was delicious, but any tips on how exactly to cook spaghetti squash??
After dinner, my family and I sat down to watch A Thousand Words, which ended up being a very funny movie. It’s all in Eddie Murphey’s facial expressions!
I woke up bright and early at the sound of my alarm for my workout this morning. I used Verizon Video On Demand, and chose the Absolute Kickboxing which was tough! All I have to say is that you have to have some serious coordination to do what the instructor is doing. Or maybe I’m just that uncoordinated?? 😉 Combined with the warm up, cardio segment, and cool down it rounded out to about 45 minutes. Not bad, if i do say so myself!
After workout, I quickly made some coffee and put together a simple breakfast.
Half a banana with a tablespoon of crunchy pb in the middle……
And a bag of Cheerios to munch on while I type up this post.
Now it’s time to get some chores done and a little leftover homework done before I’m off to work! Almost Friday!
Christmas went by way to fast, and I can only wait until next year. There is just something about the season that seems to put the world in a joyful mood.
Last night while playing board games I decided to make me a little something to eat.
PB&J, mixed fruit, and a mini babybel light.
This morning I did a workout plan from one of my Shape magazines. All it requires is a staircase so I can do it in my own home. No going out in the snow for this girl! It consists of 20 minutes of running/ walking the stairs with a few extra moves ties in. I finished off with 4 sets of these moves…
-100 jumping jacks
-10 triceps dips
-30 second planks
-30 second wall sits
I’m happy with this workout today, and enjoyed doing something a little different!
I actually didn’t take any pics this morning because all it was was a bowl of Cheerios with a cup of unsweetened vanilla almond milk. But, I did have my coffee, and will probably be going back for more after I finish up with this post…

MERRY CHRISTMAS! I hope everyone had a wonderful Christmas!
Our day started early with everyone up and moving at 7 this morning! It may just be that I am still 5 years old inside?? And I just love Christmas! Once coffee was made and everyone gathered around in the living room, we started with the stockings. I got lots of Disney goodies…
And a couple gift cards…….
But nothing compares to the one gift that has had me excited all day…especially since it has to do with blogging! I got a new Nikon 1! I can officially say that it takes amazing pictures, and It is so much easier to use than my old camera. So excited!
Anyway, one of my other favorite parts of Christmas morning is watching my family open the gifts I got them! I love to catch the reactions on camera 🙂
After lots of tinkering with new toys and such, watching a few movies, and getting a very nice surprise for a Texas Christmas..

My glazed pork loin, salad, corn casserole, sweet potato casserole, and cheesy broccoli rice casserole. It was yummy, and I could eat this stuff everyday of the year! We also had quite an array of dessert items…

We were all pretty stuffed, so of course we had to work it all off with my new Just Dance: Disney game! Let me tell you, this will work up a sweat. So much fun, you wouldn’t even think you were working out!

I am happy to say that I am feeling 100% better today, and my voice is almost back! I still sound a little bit like a dying dolphin though 😉 This quick recovery is all thanks to the fact that I got a shot last night…… In the rear! But totally worth it! And since my mom was the one who suggested it to the doctor(really mom?), she owed me ice cream!
We stopped by Braums on the way home for some Cappuccino Chunk Frozen Yogurt! Again, totally worth it!
I am about to head out for a loonng shift at work, so I’m fueling up with a good breakfast!

A Kashi Go Lean Crisp! These are by far my favorite fiber/protein bars! And I also smacked on a honeycrisp apple unpictured. I think I’m ready to tackle this work day now that I feel better and have had a good breakfast!

Unfortunately, I have been sick the past week and I’m feeling worse than I have all week! I just wanted to check in with the blog. I don’t think I will be on here the next few days. It would be some pretty boring posts anyway, since I have failed to take ANY pictures. Sorry! Have a great weekend!
Yesterday I was feeling much better, but still a little bit of a fever and sore throat. I was able to get up and start my day at around 7. I got showered and ready for the day, then I went downstairs to get some breakfast…..I decided to hold off on workout until later to see how I was feeling.
Just the typical oatmeal bowl, which I thought would feel good on my throat. It hit the spot!

After everyone had showered and eaten my mom, Jon, Michaela, and I headed out to do a little Christmas shopping and another important stop along the way! Tonight, my mom and I are running in the Jingle Bell 5k, so we had to go pick up our shirts, jingle bells, and bibs! I can’t wait! Half way through our shopping adventures we decided to stop for some lunch.
We made a few more stops before heading home and I was feeling very tired, and wanted a nap. I finished the trip with my grandparent’s gifts and some for a few friends! Less than a week until Christmas!!!!!!
After my nap, I was feeling well enough to do a little workout, so I did 30 minutes of circuit training, before my body said no more. A little while after workout, I made a small protien shake with a cup of vanilla almond milk and weight watchers salted caramel shake mix( I won it in a gift basket at a book signing). I was surprised at how good it was! I also had one of my banana pudding cookies for a little treat…
Tonight it was a family favorite…. Make -Your-Own pizzas! When I was little we would do this every Thursday night. Since then we do it every so often, but they are still one of my favorites.
I made mine with a sandwich thin, pizza sauce, mozzarella and Parmesan cheese, turkey pepperoni, spinach, and olives! So good!
I finished off my evening with some Pinterest searching, and some hot chocolate! Half way through the week!!!!!!
Unfortunately, I woke up with a headache, sore throat, and a 101 fever this morning:( Not fun at all. I promptly called into work so they would have enough time to find someone to cover my shift, because I could tell it was not going to get better as the day went on. I havn’t had much of an appetite today, not even coffee tasted good! That is pretty bad. Around 9 this morning I decided to try and eat something to see if that would make me feel a little better, so my mom graciously made me an egg mug.…
This is a recycled picture, because today min had some chopped spinach in it. While it gave me a little more energy, I still had no appetite. Through out the day I did a lot of sleeping, TV watching, and snacked on a little something when I felt like it. I hate being sick! It makes me feel like I am being lazy when I just lay in bed still in my pajamas, but I know that I have to let my body recover.
A few hours later after some medicine and lots of rest, decided to eat some dinner with my family. My mom made spaghetti, but she made something a tiny bit different for me and her.
They are just what they sound like, noodles made of Tofu. A whole bag of it has only 40 calories and 1 gram of fat. Quite a difference from actual pasta. It is sold in the refrigerated section with the actual tofu. This was our first time trying in, and I will be honest and say that it is nothing like noodles. It was a weird texture and hard to chew. It also had a funky tofu smell. I doctored my up by putting in over shredded iceberg lettuce, plenty of spaghetti sauce. and some Parmesan cheese. It helped a little bit, but I think my next experiment will be spaghetti squash. .
I think I am starting to feel a little better, my fever is gone however i still feel yucky and exhausted Looks like I will end my evening with a Christmas movie and some hot chocolate…
Hopefully tomorrow I will feel like myself again. Hope everyone else is well and healthy!
Busy, busy, busy! I have been going non-stop since Friday morning! I am now finally getting to chill out for awhile! Today’s eats have not been photographed since I haven’t been home, but I do have most of yesterday’s….
I knew I had a long shift at work, so I filled up on a good breakfast before heading out.
I mixed half cup each of plain cheerios and frosted shredded wheat. I sprinkled some cinnamon on top and ate with skim milk. I also cooked up a half cup of egg beaters with spinach for some more protein. Yummy and filling, and ready for work!
A grilled sandwich thin with pepper jack cheese, lettuce, and tomato. I also had a sliced cucumber topped with salsa!
It’s nice to be able to rest for a few hours. I hope to get a little more of a nap in before dinner. Cooking up some good ol’country food tonight! Have a restful Sunday!
Since I am home-schooled, I take classes at a CO-OP where different moms teach different subjects. Every year around this time the teachers come together to do a Chili Cook-Off, and this year they are giving the students an opportunity to join in the fun. So today, I am hard at work in the kitchen for my special little project! Thanks to Two Peas and Their Pod, I found a perfect recipe that I cant wait to try!

I made one egg topped with some salsa, toasted a Thomas Bagel thin with spray butter and cinnamon, and some frozen fruit! Simple and satisfying.
I didn’t feel like going to the gym today or going running, so I changed it up a bit and did Zumba on the Wii! It was fun, and still a great workout! I think I’ll do a few strength intervals a little later.
Now, as I finish up my baking, I have some chores to do and some schoolwork to work on! Hope everyone is having a great Thursday. We are almost to Friday people!
