Well today I slept in until 8! That is so rare! I started my morning of with a simple breakfast of yogurt and a Clif bar…
I did some school work, I have a big essay due for Spanish class in a few weeks and am really procrastinating on it. I also caught up on a little Make It or Break It on Netflix, while baking some Molasses Oatmeal Bread that I found in a Taste of Home cookbook!

They really had the house smelling good!
While those cooled, I made a salad for lunch (Romaine, spinach,boiled egg, Parmesan, halved-grapes, and cucumber)
And I used salsa for my dressing 🙂
And I ended lunch with a pack of these….
A nice healthy treat…
After completing some laundry, getting a good 40 minute strength workout in,and taking my brother to his classes i was feeling a bit hungry so I decided to dig into my Molasses Oat Bread…
I did, however, round out my afternoon with an hour nap! Hey, I’m still catching up from my lack of sleep from the weekend! I’m about to head out to work for an unusually short shift, so for a quick dinner I made a Smart Ones Santa Fe Rice & Beans topped over some romaine and mushrooms for added bulk and veggies!
