Rock’n Roller Coaster & a Feast

Yesterday we went to my favorite Disney park: Hollywood Studios! Before heading out I toasted a bagel thin, topped it with Peanut Butter & Co. White Chocolate Wonderful, and ate an apple on the side for some fresh produce.

We grabbed our bags and headed for the bus stop. The first thing wevdid when we got to the park was beeline it over to the Rock’n Roller Coaster featuring Aerosmith! This is the best ride in my opinion. Not just the best at WDW, but anywhere! The ride goes from 0-80 in 2 seconds while Steven Tyler is blasting his #1 hits throughout the speakers! It’s fun, exciting, and terrifying all at the same time! I love it!

By the time we got to the park and through the long line my grandparents had arrived and it was lunch time. We headed over to the ABC Commissary hoping to fill up ans keep going until our really late dinner reservations! I picked the CousCous Quinoa & Arugala Salad with chicken.

I now know that I am a fan of quinoa so the salad was good. My only complaint is that they put the salad dressing on for you, and it was way to much! But overall, good!c
For my dessert I opted for the No-Sugar Added Strawberry Parfait! I might as well try to make some healthy(ish) dessert decisions ūüėČ

This was actually really good! The bottom was like a strawberry pie filling type stuff(not exactly real strawberries), the middle was mist like a vanilla custard, topped with a crumb topping and some fresh blueberries! I ate every bit of it!

After lunch, we headed straight over to the Tower of Terror. The name explains it all! This ride is based off of a Twighlight Zone episode. You are taken into the basement of a hotel, and are loaded onto an elevator with about 20 or so other people! The elevator takes you up several stories, strolls through a room where some scarcely real ghosts appear, and into another dark room… And you fall! The best and scariest part I’d the ride is its never the same ride! A computer randomized the drop sequence, so you could have 3 really far drops or 5 short drops. You never know! We rode several other rides and saw a few shows before heading back to.the hotel for rest. When we first got there my mom, sister, and I split the cutest soft pretzel I’ve ever had!

Hours later, we had to catch two different buses to get to where our restaurant was. We had zn 8:55 reservation, so we were all pretty hungry! Although lunch still kept me pretty full, along with our sweetittle snack we were ready to eat! We went to the Whispering Canyon Cafe at the Wilderness Lodge. It was definitely cozy inside like a log cabin. They started our meal of with some cornbread.

It was sweet Like cake, but still tasted luke cornbread. The restaurant is family style so a bunch of food was brought to the table. It was a feast!

I wasn’t able to get a picture before everyone dug in, but there is most of it. We were brought herb roasted chicken, beef tenderloin, sausage, ribs, pulled pork, crusted fish, ribs, corn in the cob, mashed potatoes, seasoned veggies, and baked beans. Wow! That’s a lot of food now that I type all that out! I had some of he fish(not very good), a tiny bit of billed pork, mashed potatoes, a small corn cob, and I helped myself to the veggies!
Then it was the dessert course! We were treated to a trio sampler.

Once again, my camera wasn’t fast enough! Here we have Key-lime pie in a jar, neopolitan raspberry cake, and Apple-Cranberry Crumble Cake. The crumble cake was my favorite and the pie was good too. However, I was not a fan of the middle dessert.
We left with full bellies, and ready for a good night’s sleep!

Mission accomplished!

I managed to take many more pictures yesterday! However, my phone freaked out on me mid-morining, so that meant no camera. Thankfully, my dad let me take pictures with his and all is well!

So, we started our day off at about 7 AM….. No sleeping in on this vacation! Our Disney Dining Plan( DDP) only covers our lunch, dinner, and a snack, so we brought along breakfast stuff for a quick starts to our days!

I grabbed a Clif Iced Gingerbread bar and some coffee, and eagerly awaited for us to go to the buds stop! A little later, we hopped onto a bus headed towards Animal Kingdom for another fun day at Disney! We were able to ride a lot of rides despite the crowds before everyone wad ready for lunch. We met up with my grandparents and headed over to Restaurantasaurus. Try saying that 3 times fast! Every quick service dining area is insanley crowded, nut we managed to get through it without problems. Unfortunately, I did not get a picture of lunch, but that’s okay, because it wasn’t the best anyway. It was a grilled chicken sandwich with French fries, but the chicken was coated in some kind of mayonnaise cheesy type sauce. We also got a cute little cup of chocolate mousse, whick was very good, but so rich! I was only able to eat about half.

After lunch, it was back to the rides, including Expedition Everest(4 times), Dinosaur, and we even caught a showing of Finding Nemo: The Musical! It was pretty cute, and Squirt is the cutest sea turtle ever! ūüėČ
About 4 in the afternoon, we were all wiped out, so we headed back to the hotel for a quick rest, before our late dinner reservations.

Around 7 we boarded a bus for Epcot for our dinner at Tutto Italia! It was a nice Italian restaurant with a nice atmosphere, good food, and great service. In Epcot, you must be from the country if the one you are working in at the World Showcase. Meaning we met a lot of friendly Italians here for a exchange type program. They started out the dinner by bringing some basil bread and genuine Italian breadsticks…

For my main course I chose the Pollo al Forno.

It was roasted chicken with lemon on top of farro risotto with pancetta. The chicken was fall off the bone good, and this was actually my first time trying risotto, and it was tasty.

For dessert I chose an Italian classic… Chocolate gelato!

I am a big fan of ice-cream, but this stuff is amazing! I ate half of this, but shared the rest so everyone could try it. We all got something different for dessert.

Everything was wonderful and delicious. We ended the night with an amazing fire-work show before get a good night’s sleep!

Oops! I barely got any pictures yesterday! Through all the chaos and excitment of our first day in the parks there was little time for me to grab my camera, but I promise I will do better today.

Magic Kingdom was souch fun yesterday, even with thousands of people every turn you made!

We went to the Crystal Palace for dinner, and I failed to get pictures of my food; however, I got a couple shots of our furry friends ūüėČ

All in all it was a crazy, fun, exhausting day! Now we are off to Animal Kingdom for some more fun! Have a magical day ūüėČ

Finally here!

We finally made it to Florida after 20+ hours in the car! We woke up at 6 in the morning at our second stop in Alabama. We got ready and headed downstairs for some breakfast before hitting the road.

Plain oatmeal with some peanut butter and a banana. I also had a small carton of skim milk on the side! It hit rye spit and we were ready to get moving towards Florida!
We drove and drive for what felt like forever making a few rest stops here and there…. Grabbed a quick bite at Subway. Subway was one of the very few places opened on Thanksgiving and, ironically, they were out of turkey! I found that kind of funny!

So I got chicken breat with all of the veggies and mustard. Complete with a bag of sunchips!
After a few more hours, we have arrived in Orlando! We checked into our hotel and went straight to Downtown Disney for some dinner and to stretch our legs.

We ate a Pollo Campero, I got the citrus grilled chicken breast, black beans & rbice, and served with warm corn tortillas! Very yummy! Time to enjoy vacation! Be back tomorrow with more fun! Hope yall all had a wonderful Thanksgiving!

Ready for Florida!

In less than 12 hours we are loading up in our cars and leaving for sunny Orlando! I’ll be like a little kid on Christmas Eve, and won’t even be able to¬†sleep¬†tonight! Everything is packed( I think!) and ready to go! I’m not exactly thrilled about being in the car¬†tomorrow for 12-14 hours, but I know the destination is well worth it!

¬†So i slept in this morning, and when I woke up a snacked on some Multi-Grain Cheerios while i worked on packing. Not much of a breakfast, becuase I had a “brunch” planned with one of my friends that is ¬†home from college. We went to Chick-fil-A and I got a 3-count Chicken Minis and a fruit cup. No picture, but it was as good as always ūüôā

Afterward, my mom and I made some last minute shopping trips before heading back home, and I was relieved to finally finish packing. What can I say, I¬†procrastinate…….. ¬†with¬†everything¬†:/

I did 20 minutes of abs today, but other than that I didn’t have much time for anything else. My dad and I had to take our 2 dogs to the kennel, which is quite a chore(and a workout in itself!)

 I snacked on a Flat-out wrap with some Laughing cow cheese and an apple through the afternoon.

*Dinner*

We had to find something quick and easy to make and clean up for dinner tonight, so we picked up some Lloyd’s BBQ Shredded Chicken and heated it up in the microwave.

While everyone else used traditional hamburger buns, I made a salad and incorporated the BBQ meat into it. We have plenty of veggies that I wanted to use up so they don’t go to waste while we are gone! I used all the remaining spinach, sliced mushrooms, homemade black bean corn salsa, shredded¬†mozzarella, and a serving of the BBQ. I used salsa as my dressing. I also ate the rest of my Special-K crackers on the side.

SO GOOD!

Well, I hope you all enjoy your evening, while I try to contain my¬†excitement¬†for the trip to come! I hope to update the blog during¬†vacation, and I’m going to do my best! G’night!

Let the packing begin!

In less than 2 days my family and I will be leaving for Disney World on my senior trip! Unfortunately, we are a family of last minute packers, which means we have a lot to get done in the next 36 hours. I as up and moving at 6:00 this morning. I grabbed a Clif Z Bar, and headed out the door to the gym. I did an easy 25 minute walk/run interval on the treadmill, then finished up with some strength training and abs. When I got home, I still had so much to do I decided that fruit would be a quick, healthy breakfast.

I have a giant bag of Dole’s Frozen Nutrition Blend in the freezer, and I drizzled it with some sugar-free syrup ( it just sounded good at the time). I also had a banana, which was looking kinda ugly. My mom, sister(Michaela), brother(Kevin), and I loaded up in the car for a trip to Costco to pick up lots of snacks for the loooonnnggg car ride to Florida.

Oatmeal Molasses Bread

Well today I slept in until 8! That is so rare! I started my morning of with a simple breakfast of yogurt and a Clif bar…

I crumbled a few Frosted Shredded Wheats on top of my yogurt and tried a new flavor of Clif Bar…. Peanut Toffee Buzz!!!! SO GOOD! May be my new favorite.

I did some school work, I have a big essay due for Spanish class in a few weeks and am really procrastinating on it. I also caught up on a little Make It or Break It on Netflix, while baking some Molasses Oatmeal Bread that I found in a Taste of Home cookbook!

While those cooled, I made a salad for lunch (Romaine, spinach,boiled egg, Parmesan, halved-grapes, and cucumber)

After completing some laundry, getting a good 40 minute¬†strength¬†workout in,and taking my brother to his classes i was feeling a bit hungry so I decided to dig into my Molasses Oat Bread…

I did, however, round out my afternoon with an hour nap! Hey, I’m still catching up from my lack of sleep from the weekend! I’m about to head out to work for an unusually short shift, so for a quick dinner I made a Smart Ones Santa Fe Rice & Beans topped over some romaine and mushrooms¬†for added bulk and veggies!

Loving this time change!

Does anyone else just love the end of daylight savings??? My brother and I were up early at 6:00 AM for our trip to the gym, but it was a lot easier to get up since it really felt like an hour later! Before heading out I grabbed a Clif Z-Bar for some pre-workout fuel.

We did a lot of¬†triceps¬†and shoulder work today, and of course did some ab work! I’m planning on going for a run this evening to get some cardio in today.¬†

Once we got back from the gym, I cooked me up a Hungry Girl original egg-mug! What a genius idea! Served along with some Special-K crackers, and two lovely cups of coffee!

There are so many things you can do with the egg mugs but I just simply used my egg-beaters, and a laughing cow Swiss cheese wedge! Delicious!!!

Now to get to work on some math homework and maybe watch an episode of Once Upon a Time on Netflix! Love that show (although I have a hard time following the story line sometimes!)

Let’s get this Tuesday going!
